I’m not doing Keto/low carb or anything. Just fancied this for breaky this morning and its easy peasy pudding and pie.

Ingredients
2 eggs
6 slices of ham
1 tsp of parmesan
Black pepper
Sprinkle of parsley

Method
Preheat oven to 200 C. Grease a muffin tin or I used ramekins. Layer 3 slices of ham in each ramekin. I used quite thin ham so needed 3 slices each but if ham is thicker you may only need one slice, judge accordingly. Crack an egg in each ham bowl, sprinkle parmesan & pepper. Fold over ham if got extra bits, all depends on size of bowl/egg. Bake for approximately 15 mins, depending on how you like your egg. Sprinkle some parsley, voila! A high protein snack or meal. 💪
