OMG! Loved this. Total calories approx. 582. Was really easy. Definitely making this more often. All ingredients I usually have in fridge. The brown basmati really compliments the dish. Serves 1.


1 cooked chicken breast

1 tbsn of Philadelphia cream cheese

1 tsp of chopped garlic

1 tbsn butter

1 cup frozen onions

1 cup frozen mushrooms

1 tbsn of frozen parsley

1 tsp of paprika

Salt, black pepper and chilli flakes to taste

1 cup cooked brown basmati rice


Melt butter in pot and fry onions and mushrooms. There will be water from the frozen vegetables in pot. Add Philadelphia and stir. Chop chicken and add to pot. Add garlic, parsley, spices and stir. Allow to simmer on low heat for 5 mins. I usually cook rice in my ricecooker to simplify things. Serve with lovely rice. Enjoy. Xx
