Loved it! My dad has been working at a salmon farm (as you do in rural Scotland). So on her weekly visit, my mum brought over dome salmon portions for me and my sis.
This recipe was easy peasy. Approx. 670 calories.
1 Salmon steak
1 cup of cooked rice
Cup of cooked broccoli
1 tbsn of Teriyaki sauce
1 tsp of chopped garlic
1 tsp of crushed ginger
1 tsp of light soya sauce
1 tsp of mirin
1 tsp of sesame seeds
1 tsp of sesame oil
Pop marinade ingredients in sandwich bag and add salmon. Leave overnight.
Fry or grill fish until cooked. I add a lid to pan to semi steam fish, then remove lid once fish cooked to crisp skin. I didn’t use oil to cook as there was plenty marinade to keep from sticking.
Arrange fish rice and broccoli on plate. Mix dressing ingredients and drizzle over plate. Yummy.
