May was my gran on my mother’s side. She used to make this soup regularly. Cheap and easy – helped feed a family of 9.

Ingredients

Cup of frozen onions

Bowl of frozen carrots

3 pints of water

3 chicken stock cubes

6 potatoes

1 tbsn of butter

White pepper to taste

Method

Fry carrots and onions in butter till golden. Add water and stock cubes. Peel potatoes and chop into chunks (I like them big). Boil until vegetables are cooked. Remove most of the potatoes and keep aside in a bowl and mash remaining vegetables. Add pepper to taste and your done. Love this soup.
