I LOVE noodles. I always have a supply of asian instant noodles in my cupboard for quick meals. I love them for breakfast on cold mornings. I may have been from the orient in a prior life.

Anyway, I digress, there is a fabulous restaurant in Edinburgh called Chop Chop that does hand made noodles in a minced meat sauce. You can choose chicken, pork or beef and each meat sauce has different flavours to suit the meat.

So, needless to say, I was inspired for this recipe.

Ingredients

500g of beef mince

Bowl of frozen carrots

Bowl of frozen peppers

Bowl of frozen onions

2 tsp of chopped garlic

2 tsp of chopped ginger

2 tbsp of dark soya sauce

1 tbsp of sweet chilli sauce

1 tbsp of sesame oil

1.5 bowls of beef stock

1 tsp of chinese five spice

4 tsp of cornflour

Chilli oil as per preference

(Bowl = cereal size)

Method

Combine ingredients, except cornflour, in slow cooker. Cook on high for 4 hours. Check seasoning. Mix 4 tsp of cornflour with some cooking liquor into paste and add to casserole. Allow to cook for another 30 mins or so until sauce thickens enough to coat noodles. Boil up some noodles add some sauce and your done. Easy make ahead meal for during the week.
