This weeks one pot lunch wonder. Lots of flavour and nutrition for a pregnant woman.

Ingredients

Pack of Pork and Chorizo burgers crumbled into small pieces.

Can of kidney beans

Bowl of mini tomatoes chopped

Four cups of brown basmati rice

2 tsp of chopped garlic

Bowl of frozen carrots

Bowl of frozen peppers

Bowl of frozen spinach

Bowl of frozen onions

2 tsp of cumin

1 tsp of smoked paprika

1 tsp of cayenne pepper

1 tsp of oregano

1 tsp of thyme

1 tsp of brown sugar

1 beef stock cube

2 tsp of parmesan cheese

Half a pint of water, add more as needed.

Method

Cook rice separatley according to instructions. Combine rest of ingredients except beans in a dutch oven. Cook on low for about 1 hr with lid on. Once cooked, add cooked rice and beans. Season to taste. Your done.

Lots of lunch portions in here. Excellent for freezer.
