Tasty nutritious salad for lunches, a barbecue side or pot luck dish.

Step 1 – Marinade

3 chicken breasts sliced

4 tbsp light soya sauce

4 tbsp of mirin

1tbsp of sesame oil

3 tbsp of cooking oil

4 tbsp of maple syrup

4 tbsp of Chinese 5 Spice powder

6 cloves of garlic

4 tbsp of chopped ginger

1 tsp of chilli bean paste

Add the above ingredients to a freezer bag. Massage ingredients into meat. Seal bag and refrigerate for at least 1 hour.

Step 2 – The Rest

6 medium noodle nests

1 pack of stir-fry veg

Sliced 1/4s of red, green, yellow peppers

1/4 of cucumber sliced into batons

3 tbsp of sesame oil

3 tbsp of balsamic vinegar

3 tbsp of light soya sauce

1 tbsp of oyster sauce

1tbsp of cooking oil

1 tsp of sweet chilli sauce

Cook noodles as per instructions. Add to cold water in a bowl to stop cooking, leave for five minutes, drain and add to large bowl to cool with liquid ingredients. Stir-fry mixed stir fry veg with cooking oil, sweet chilli sauce and oyster sauce. Once cooled, combine with the remaining ingredients, mix and refrigerate.

Step 3 – Add The Meat

Stir-fry marinaded chicken. Leave to cool. Combine with other ingredients. Job done. Makes approximately six portions.
