Another good lunch option for the summer time. Quick and easy to make. Great to make ahead.

Ingredients

500g of penne pasta

3 tbsn of green pesto

1 tbsn of pine nuts

3 tbsn of parmesan

250g of mini mozzarella balls quartered

1 tbsn of mayo

2 tbsn of extra virgin olive oil

Chilli flakes

500g of mini plum tomatoes halved

Salt & pepper

Method

Cook pasta as per instructions. Drain and add oil and pesto. Allow too cool. Add other ingredients, mix and refrigerate.
